When the weather turns cold cooler sometimes chilly, it's time for soup.
My boys LOVE soup. And I LOVE my crock pot. We ALL LOVE pizza.
So this is the perfect combination of all three.
Crock Pot "Pizza" Soup
28 ounces beef stock (or boxed if you must)
28 ounces diced canned tomatoes (I use a 14 ounce can of fire roasted tomatoes and a 14 ounce can of Italian tomatoes)
2 14.5 ounce cans Great Northern Beans, ie, cannellini beans, rinsed
1 cup water
1 cup small pasta, such as macaroni or small shells
Parmesan cheese, shredded, to taste
Salt and pepper, to taste
Combine all ingredients EXCEPT pasta in a crock pot. Cook on low in the crock pot for 6-8 hours. During the last 30 minutes of cooking, increase temperature to high, add pasta. Cook until pasta is tender. Serve with Parmesan cheese to taste.
And bread sticks, of course.
